Sweet and Spicy Smoked Chicken Wings with Jamaican Jitter Juice Wing Sauce

These wings are so quick and easy to make that the hardest part is choosing which beer to drink while you watch the smoker work its magic!


Since chicken wings are only in the smoker for about an hour, we choose to use a simple dry rub and omit any kind of mop liquid. Applewood makes for a nice, slightly sweet smoke that plays nice with the fruity heat of our Jamaican Jitter Juice sauce recipe. Although we smoke the wings, this recipe is easily translated to baked wings if you don't have a smoker setup. Simply skip the smoker and bake on a sheet pan at 350 degrees for about 30 minutes. No matter what your cooking method- make sure to get your internal temperature of the chicken up to 160 degrees.


Wing Ingredients:

2 Tbsp Salt

1 Tbsp Pepper

1 Tbsp Brown Sugar

1 Tbsp Garlic, Granulated

1 Tbsp Paprika

1/2 Tbsp Cumin

1 Tbsp Parsley, Dried


6 Pounds Chicken Wings (we prefer the whole joint for smoking vs. the wing and drum being separated)


1 Cup Applewood Smoking Chips


Wing Sauce Ingredients:

1 Stick Butter

1 Bottle Jamaican Jitter Juice Hot Sauce

2 Tbsp Honey

1/2 tsp Salt


-Toss all of the dry spice ingredients together and coat the chicken wings evenly with the spice mixture.

-Soak applewood chips in hot water

-Put Wings on the rack of your smoker. Fill Wood Chip Holder with about 1/2 cup of pre-soaked wood chips.

-Smoke at 250 degrees for 1 hour. Fill wood chips at the halfway point if smoke stops coming out of the flue.

-While you wait on the smoker, add all of the sauce ingredients in a small sauce pan. Stir over medium heat until the butter melts and is completely incorporated into the sauce.

-Pull wings from smoker. We like to give the wings a quick char on the grill at this point because we're big supporters of crispy bits.

-Toss wings with delicious sauce!
